Kurt’s Holiday Recipe

My husband loves to cook – and I love for him to do it! Kurt makes his favorite dishes and also likes to come up with new ones. He’s a pro at experimenting with recipes and altering a bit to make his own. Here’s one of our family favorites, a tried and true culinary creation to make for family and friends!

Pie:                                                                     Meringue:
4 eggs separated (use whites for meringue)      4 egg whites

1 1/2 cup packed brown sugar                           1/2 tsp cream of tartar
1/3 cup corn starch                                             1/2 cup sugar
1/2 tsp salt                                                          1 tsp vanilla
2 cups milk
3 Tbsp butter
1 tsp vanilla

Pie: Separate 4 eggs, set aside whites for meringue, whisk yolks in medium bowl. Combine sugar, corn starch and salt in sauce pan, add 2 cups milk and heat over medium high heat, stirring constantly; when reaching bubble/foam stage, turn down slightly and keep stirring for 2 more min. Pour 1/2 pudding into yolks and whisk, then return that mixture to the heated pan. Add butter and vanilla, whisk then remove from heat and cover.
Meringue: Whip egg whites and cream of tartar with electric mixer 1 min. Then slowly add sugar and vanilla. Beat until moderately stiff. Pour pudding into crust. Use frozen premade crust or make your own. Spread meringue over entire top, bake 325 for 30 min. Cool on rack for 2 hours, then refrigerate.
